The Cooking Corner: Soft Caramel

So this week I bring you something I have failed at 6 times in the last several months.  I had a very specific taste I wanted to achieve for this caramel and now that it has been perfected I can bring it to you.  It has buttery smooth flavor with a hint of vanilla. This caramel will blow you away and you can use it to make all kinds of different candy. Enjoy this labor of love.

Ingredients
1 Cup (2 Sticks) Unsalted Butter (Cut)
1 ¼ Cup Sweetened Condensed Milk
1 Cup Light Corn Syrup
2 Cups Light Brown Sugar (Packed)
1 TBSP Vanilla Extract
Directions
Step 1: In a saucepan, melt your butter on medium low heat.

Step 2: Add Corn Syrup.

Step 3: Add condensed milk.

Step 3

Step 4: Add brown sugar. Stir with a whisk and move the heat to medium. You will need to continue to stir more than you don’t. You do not want it to burn. It can bubble a little but do not let it boil. If you have to adjust the heat that is ok. You will know it’s done when it reaches a temp between 235 and 245 degrees Fahrenheit and is no longer grainy and all sugars have melted to a smooth consistency.

Step 5: Remove from heat and add vanilla and whisk into mixture until it is all incorporated.
Step 6: Line a tray that is several inches deep with parchment paper and pour into mixture and let cool for at least 4 hours. Once it is cooled off cover and put it in the refrigerator and cool for at least 4 more hours.
