Here’s a story and its true. Having grown up in a big Italian family my entire life I have ate the Italian version of a meatloaf. Its tasty and delicious but the truth is its the same recipe as my meatballs just in the form of a loaf and cooked in the oven. If you would like to make that version you can get the meatball recipe here. Now to the present. This past week this has been rattling around in my head and the end result is a tasty and comforting meatloaf with brown gravy.
Ingredients
2 ½ Pounds Ground Beef
1 Medium/Large Onion
1TBSP Minced Garlic
1 Cup Bread Crumbs
4 Eggs
¾ Cup Milk
1 TBSP Olive Oil
1/2 Cup Cornstarch
4 Cups Beef Broth
Butter
Pepper
Salt
Preparations
Prep 1: Preheat the oven to 375 degrees.
Prep 2: Finely chop your onions.

Prep 3: On medium heat melt 2 TBSP of butter and add 1 TBSP of Olive Oil in a pan.

Prep 4: Add onions to the pan and cook for 5 minutes or so.

Prep 5: Add garlic (I used minced jarlic) and cook for around 5 more mins until onions are fully caramelized. Once finished, put aside to cool off.

Directions
Step 1: Add 1 cup of breadcrumbs and ¾ cup of milk to a large bowl and mix until it becomes almost paste-like.

Step 2: Add ground beef.

Step 3: Add 4 eggs.

Step 4: Add 1 tsp of salt and 1 tsp of pepper.

Step 5: Add caramelized onions.

Step 6: Mix together well. It will still be a little wet but don’t worry about this as it is supposed to be.

Step 7: On a tray shape your meat mixture into the shape of a loaf. Put in the oven and cook for 45-50 minutes.

Step 8: While your meatloaf is cooking you can now start to make your gravy. In a pot melt ¾ stick of butter on medium high heat.

Step 9: Remove from heat and add 1/2 cup of cornstarch and whisk until it becomes a paste.

Step 10: Put back on the heat and turn it up to high. Slowly whisk 4 cups of beef broth into the pot. Add 1 tsp of salt and 1 tsp of pepper. Continue to whisk making sure all is incorporated and no lumps.

Step 11: Once the gravy starts to thicken remove it from the heat. (Approximately 5 minutes.)

Once your meatloaf is ready remove it from the oven and let cool a few minutes before cutting. Serve and Enjoy!
