The Cooking Corner: Vodka Sauce

I have been making this sauce for over 30 years and it was taught to me by the father of an old boss of mine.  He was from Italy and did not speak English so it did take a little while to learn it but it is so tasty and you will never want to be without it again.

Ingredients
1 ½ cup Half and Half
2 cups tomato sauce
1 cup pecorino romano grated cheese
¼ cup parsley
1 TBSP pepper
6oz chopped ham
1 small onion
1 shot plain vodka
Olive oil

Directions

Step One: Chop your onion and ham

Step Two: Heat your pan and add some olive oil. Add your onions and cook for about 3 mins on med high.

Step Three: Add your ham and cook for 3 more mins.

Step Four: Add pepper and mix well.

Step Four

Step Five: Add your shot of vodka and light it to burn off the alcohol.

(There is no photo for the lighting of the Vodka because I only have so many hands and didn’t want to burn down my kitchen)

Step Six: Lower the heat to medium low and add your tomatoes and stir.

Step Seven: Add your half and half and stir well.

Step Eight: Add parsley and cheese and continue to stir and cook on medium for another 10 mins or so.

Step Eight

Best used on Rigatoni or Penne pasta.
