I will never forget the first time that I made this dish. I was still young and learning and I was working at a local Pizza place on Long Island. There was a fair going on and the block we were on was closed and the boss wanted to set up a booth out in front that sold more than pizza. I told him I could make something and he gave the ok. The original recipe was about 40 pounds of sausage as it was for a large crowd. Little did I know that it would sell out in 20 minutes and Id be making it all day long to try and keep up with the crowd. I have streamlined it over the years to feed my own family and I hope you all enjoy.
Ingredients
2 ½ Pounds Sweet Italian Sausage
1 Pound (14) Seedless Sweet Peppers
1 large and 1 Medium Onion
4 Cups Water
1 tsp Black Pepper
2 tsp Salt
2 TBSP Garlic Powder
Olive Oil
Directions
Prep 1: Cut your peppers and onions and set aside.


Step 1: On medium high heat your pan and add some Olive Oil and Sausage. Cook for around 5 minutes or so and flip the sausage and cover. Lower heat to medium and cook for another 5 minutes or so. (Refer to picture to see what they should look like) Put aside in a bowl.


Step 2: In the same pan lower the heat to medium low and add onions and peppers. Stir so they are mixed together well in the pan. Turn heat back up to medium and cook for 10 minutes.

Step 3: Turn heat up to medium high and add 4 cups of water, 1 tsp of pepper, 2 tsp of salt and 2 TBSP of garlic powder and stir well into the peppers and onions. Cook for 10 mins.
Step 4: While the mixture is cooking you will need to cut your sausages into small pieces. (see photo) There will be juices left in the bowl. That is all flavor so put it in the pan.


Step 5: Uncover and add sausage and stir. Cook on high heat uncovered for 20 to 30 mins until most of the liquid is gone. Remove from heat and serve.

Step 6: Using a slotted spoon add the sausage and peppers to a bun or hero and enjoy. You can toast the bun to make it even better.
