Ingredients
2 Cups All Purpose Flour
¼ Cup Semolina Flour
6 Egg Yolks
1 Egg
1 tsp Salt
1 TBSP Olive Oil
Directions
Step 1: In a large bowl add 2 cups of Flour. (Traditionally this would be done directly on a table or flat surface but I make a mess when I do this. A large bowl is easier and can still be made correctly)

Step 2: Add 1 tsp of salt and ¼ cup of Semolina flour and mix together well.

Step 3: Move the flour to the edges of the bowl creating a spot in the center that is empty. (See photo)

Step 4: Add 6 egg yolks and 1 egg to center or the flour. Add 1 TBSP of Olive oil.

Step 5: Slowly mix the eggs while integrating the flour to form a dough.


Step 6: Once it has formed a dough. Lightly flour your flat surface and place dough on it.

Step 7:Kneed the dough on the table for at least 5 mins. You will feel it getting smoother and easier to work with as you go. Once done let sit for 30 to 60 mins.

Step 8: Add some flour to the dough on both sides and sprinkle some flour on the table and with a rolling pin begin to roll the dough until you get a large thin dough. This will take up a lot of space. (You can also use a pasta maker with this dough but for our purposes here I will do it old school and roll it out)


Step 9: Cut your now rolled out dough in half (See photo)

Step 10: Starting with the first half. Flour both sides of the dough and roll. Repeat for second half.


Step 11: Cut into 1 inch pieces.

Step 12: Unroll and toss in flour to keep from sticking.

Step 13: Place in a pot of boiling water until al dente. About 5 mins.
Step 14: Drain your cooked pasta.

Step 15: Add the pasta back to the pot and add sauce to it and mix well and serve.
