It has been some time since I decided to create a new dish. This one has been dancing around in my head for a while now. I’m very happy with how it came out and my family and friends loved it. Enjoy!
Ingredients
3 Chicken Breasts
¼ Cup Sazon
6 Eggs
1 Cup Flour
6 Slices Bacon
⅔ Cup Corn Starch
12 Slices Pepperjack Cheese
Milk
Oil
Panko Bread Crumbs
Preparations
Prep 1: Cut Chicken into cubes.

Prep 2: Add ¼ cup of Sazon to the chicken. Mix thoroughly. Cover and put in the fridge for at least an hour. This can marinate overnight.

Prep 3: Cook 6 slices of bacon and put aside. Leave the bacon grease in the pan as you will need it later for the chicken.

Prep 4: Place 6 eggs in a bowl with a cup and a half of milk and whisk.

Prep 5: Add 1 cup of flour and ⅔ cup of corn starch to egg and milk mixture and whisk until smooth.

Prep 6: Add your marinated chicken to the batter you just made and mix it in well.

Prep 7: In a second bowl add your panko breadcrumbs. You will need quite a bit for the next step.

Prep 8: Take one piece of chicken at a time out of the batter and coat with Panko bread crumbs until fully covered. Repeat this for all of your chicken.

Directions
Step 1: In a small pot add 12 slices of Pepperjack cheese and ⅓ cup of milk and slowly melt to blend it all together till you have a creamy sauce. Put on low or keep warm. Be sure to stir occasionally so as not to stick to the pot.

Step 2: In the pan with the bacon grease add oil and heat up to cook your chicken.
Step 3: Add chicken several pieces at a time to your heated oil and cook until golden brown. Repeat until all chicken is fully cooked.


Step 4: Add your chicken to a plate and drizzle with a little of your cheese sauce and top with bacon crumbles. Serve and Enjoy!
