The Cooking Corner: A Message From the Chef

So this week there will not be a new recipe.  I am taking the time to introduce myself.  The man who has been showing you secret recipes for months.  The person behind the food.

My name is Anthony and if you have been here before you probably know that part.  I am a home chef who has worked as a professional chef when I was younger and I have learned from some of the best.

It all started when I was young.  I remember watching my grandmother make home made pasta for a huge Italian family.  She did it like it was second nature and it always fascinated me to see the process.  How a person could make it look so effortlessly raised my curiosity through the roof. It made me want to learn, even at a young age.

As I got older I started paying more and more attention to what my own mother made.  She was also an amazing cook.  To this day I don’t think either of them knew what an influence they were on me when it came to food and the process of making a great meal for the family.

Having come from an Italian family on Long Island, New York the influences grew over the years.  I took jobs at Italian Pizza shops and small restaurants when I was older.  I don’t remember when I decided to learn beyond my mom and grandma but I was always amazed how people could make such amazing food with such little effort so I made it my business to learn all I can.  

In my late 20s I left Long Island and continued to learn, shifting to food shows to learn new techniques.  This led me to create some of my own dishes and to perfect the ones I knew already. Something I have passed down to my own children.  

There is just something incredible about taking ingredients and turning them into a dish so many people would enjoy.  I was highly skeptical about sharing them with the world but I am glad that I have.  The feedback has made it all worth it and I hope you all continue to try new things and enjoy my recipes.

I know there are people out there who say they can’t cook but I never bought into that.  I think anyone who wants to learn to cook can do so with just a small amount of patience and some time.  The end result is all worth it in the end.  So give it a try.  Learn something new and I hope everyone enjoys what I share here on BC News & Dollar-Saver.
