The Cooking Corner: Alfredo Sauce

Many years ago I sat back and wondered how I could make an Alfredo Sauce that was next level.  I had experimented in many ways but in the end discovered the addition of one simple ingredient made all the difference in the world.  Since then I have been told by many people that it is the best they have ever had.  Now you too can make this in your own kitchen.  Enjoy!

Ingredients
½ Stick Butter
Olive Oil
3 TBSP Chopped Garlic
4 Ounces Smoked Ham
4 Cups Half and Half
3 TBSP Parsley
1 TBSP Black Pepper
2 Cups Grated Pecorino Romano Cheese

Directions
Step One: On medium high heat melt your butter with a few TBSP of olive oil in a pan.

Step Two: Add 3 TBSP of chopped garlic and cook for about 3 mins.

Step Three: Add your smoked ham and cook for another 3 to 5 mins.

Step Four: Lower to medium heat and slowly add your half and half. Make sure to stir.

Step Five: Add parsley and black pepper and stir.

Step Six: On medium to medium high heat bring to a simmer. Do not boil. You will now be using a whisk to stir. Lightly whisking but almost constantly. This method helps to naturally thicken your sauce.

Step Seven: Slowly add your Pecorino Romano cheese to the mixture and continue to whisk. You will see things begin to thicken even more now.

Step Eight: Lower the heat to medium and continue slowly whisking for another 5 to 10 mins.

Serve on your favorite pasta. The pasta in the photo is my grandma’s recipe and maybe down the road I will share it but for now this one stays with me.
