The Cooking Corner: Italian Cannoli Cream

If you have ever had cannoli before you know that too many people make it where it comes out grainy.  Over 20 years ago I slowly started putting this together and this is the creamiest cannoli cream you will ever have.

Ingredients
6 Cups(32oz) Ricotta Cheese
2 Cups Powdered Sugar
1 TBSP Vanilla
1 tsp Cinnamon
½ Stick Cream Cheese

Directions
Step 1: Add your ricotta to a bowl and mix slightly for about 30 seconds. (Make sure ricotta is not too wet. Pat it dry before making this recipe or it will not come out right)

Step 2: Add your cream cheese and mix until incorporated together with ricotta.

Step 3: Add your powdered sugar 1 cup at a time while slowly mixing it into your cream.

Step 4: Add your cinnamon and vanilla and mix until everything is one cohesive mixture.

Step 5: You can make your own Cannoli shells but they are a big hassle. Most stores will sell them and they are easy to fill. Just fill a piping bag and fill the shells with the cream you just made. You can put chocolate chips or pistachios on the ends of them (see photo).
